SWEET POTATO BREAKFAST COOKIES | Healthy On The Go Snack // Vegan Recipe

I apologise for always presenting you with addictive food ;)

Cookie Recipe:

- 2 cups mashed sweet potato flesh

- 2 cups oat flour (ground oats)

- 2-3 heaped TBSP smooth almond butter

- 1/3 cup crushed pecan nuts

- 3-4 TBSP maple syrup

- 2 tsp ground cinnamon

- 1 tsp vanilla extract

- 1 tsp baking powder

- pinch of salt

- 1/2 cup water or plant milk to mix :)

- makes 6-8 large (or 12 smaller cookies)

- bake for 20 mins at 180

Higher Protein Version:

- follow the exact steps as above, but reduce the oat flour to 1 & 3/4 cups & add 1 full scoop of Vivolife vanilla protein powder :)
