1. Stuffed Bell Peppers

- Cashews (half cup)

- Garlic Powder

- Lemon Juice (1 Lemon)

- Raw Sunflower Seeds (half cup)

- 2-3 bell peppers, cut in half and deseeded

2. Spaghetti & Meat Balls

- Gardein Meatless Meatballs

- Wheat Noodles

- Pasta Sauce (read ingredients to make sure it's vegan)

- Dairy-free, vegan parmesan cheese (we used the brand "Go Veggie")

- Optional: 1 ripe avocado or tahini sauce (soooo goood)

3. Simple Buddha Bowl

- 1 can chickpeas

- 1 can black beans

- Pomegranate seeds

- Almond Butter

- Green onions

- Diced Mango

- Use a dressing of your choice!
