INGREDIENTS

FOR THE SALAD

2 (15-oz.) can chickpeas, drained and rinsed

1 medium cucumber, chopped

1 bell pepper, chopped

1/2 red onion, thinly sliced

1/2 c. chopped kalamata olives

1/2 c. crumbled feta

Kosher salt

Freshly ground black pepper

FOR THE LEMON PARSLEY VINAIGRETTE

1/2 c. extra-virgin olive oil

1/4 c. white wine vinegar

1 tbsp. lemon juice

1 tbsp. freshly chopped parsley

1/4 tsp. red pepper flakes

Kosher salt

Freshly ground black pepper

DIRECTIONS

In a large bowl toss together chickpeas, cucumber, bell pepper, red onion, olives, and feta. Season with salt and pepper.

In a jar fitted with a lid, combine olive oil, vinegar, lemon juice, parsley, and red pepper flakes. Shake until emulsified, then season with salt and pepper.

tasty and healthy sweet potato curry for dinner, is a perfect easy vegan curry for rice or whole wheat roti. Healthy dinner recipes for weight loss and weight management. #skinnyrecipes

Ingredients

1 large or 2 small onions: chopped

1 inch ginger

6 cloves of garlic

1 sprig of curry leaves

1 tbsp coconut oil (you can use any unrefined oil from the place you live in)

mustard seeds: 3/4 tsp

A fat pinch of jeera

2 tomatoes

1 tbsp Kashmiri chilli powder

1/2 tsp garam masala

2 tsp coriander powder

1/2 tsp turmeric powder

1/4 tsp black pepper powder

Thin coconut milk : 2 tbsp + 1 cup coconut milk

1 tsp pink himalayan salt

250 gm cauliflower

150 gm of sweet potato

3/4 cup thick coconut milk

coriander leaves as needed

1/2 cup (80 g) Pecans

BLEND

2 3/4 cup (400 g) chopped overripe bananas (about 3 to 4 large)

1/2 cup (120 g) almond butter

1/4 cup (33 g) oat flour

2 tablespoons (20 g) chia seeds

2 tablespoons (30 mL) coconut sugar

2 teaspoons baking powder

1/2 teaspoon apple cider vinegar

1/4 teaspoon baking soda

1/4 teaspoon fine sea salt

LUNCH -

Tofu Marinate

Dash of garlic powder

2 tbs maple syrup

2 tbs coconut aminos

2 tbs soy sauce

1 tbs sesame oil

5 tbs sesame seeds

MIX

Fry in pan on high for 5-8 mins

Bake in oven on 350 for 5 mins

Sauce -

Dash of garlic powder

2 tbs maple syrup

2 tbs coconut aminos

2 tbs soy sauce

1 tbs sesame oil

Coconut Rice-

2 cups rice

Can of coconut milk

1 cup water

Supper -

Jackfruit - tortillas

Fav veggies

Avocado

Cliantro

Spicy Mayo-

2 tbs vegan mayo

2 tbs hot sauce

Mango Smoothie -

1 cup frozen mango

1 cup ripple protein milk

1 shot tequila

Ice

BLEND

Sushi Bowls

- 2 cups rice

- 2 cups water

- 1 can coconut milk

Spicy Mayo

- 4 Tbs Vegan Mayo ( soy free if you have a soy allergy )

- Add as much hot sauce as you desire

Mexican Scramble

- 1/4 cup dayia vegan cheese

- 1 cup butternut squash

- 1/2 cup ground vegan meat

- 1/4 Salsa

- Avocado

It has been so long since I last vlogged (video log) and I couldn't wait to film another day of my life to share with you guys. I personally love watching and creating vlogs because it gives me an opportunity to look back in time and see how my life was in 2018. It also allows me to connect with you guys in a way that most of my regular video's can't.

Today mostly consisted of waking up leisurely, a decent raw vegan food haul from bigbasket, some calming yoga and meditation and leaning some new recipes. Having said that, I totally had a great day at the kitchen honing my skills so I can make more recipe videos for you lot!

Thanks to my armature chef skills, I now have over 2 liters of coconut milk in my fridge and I would largely appreciate it if you can share some cool recipes that uses coconut milk.
