Full Day Of Cozy Vegan Recipes | My Fall Kitchen 🍁

Healthy high protein hot chocolate:

- 4-5 soaked medjool dates

- 1-2 TBSP cacao (or any vegan choc powder)

- 1/3 scoop of Vivolife salted caramel (or vanilla) protein powder

- 2 cups of almond milk

- 1 TBSP hemp seeds

- blend & enjoy

Red lentil, quinoa veggie stew:

- 1 cup split red lentils

- 1 cup dry quinoa

- large diced white onion

- 1-2 large carrots diced

- as much kale as you can fit in (I used a whole large bag, remember it wilts!). You could also use spinaaaaach or broccoli

- large can of chopped tomatoes

- 1 tsp cinnamon

- 1 tsp turmeric

- 1 tsp cumin

- 2 -3 tsp ground garlic (or 2-3 cloves of minced fresh)

- 1 cube veggie stock

- 6-7 cups water

- salt & pepper to taste

- make as shown (I used water for frying the veggies)

- top with diced soft avocado & a drizzle of good good tahini :)

Parsnip coconut curry:

- 1 kg of peeled & diced parsnip (sweet potato, pumpkin or butternut squash work too)

- large diced white onion

- 1 can coconut milk

- veggie stock (I used 1 cube)

- 5-6 cups water

- 1 tsp cinnamon

- 1 tsp turmeric

- 1 tsp cumin

- 2-3 tsp garlic powder

- prepare as shown & enjoy with some thick sourdough break (or if you are weird like me then have it with 2-3 heads of romaine lol)
