Vegan pumpkin soup | weight loss recipes | Quick recipe

Hello everyone,

Today’s recipe is energy packed pumpkin soup. It aids in weight loss as it’s low in calories and high in fibre. What’s more? It’s filling and complete meal by itself. Some vegetables and fruits are harvested in specific seasons. It’s nature’s way of hinting what needs to be consumed during that season. Pumpkins are harvested more during winters. Make this delicious soup in no time. Coming to the recipe

1. Take orange pumpkin, cut in halves, remove the seeds ( these are useful...I will show in another recipe how to make them as a snack ) , remove the gut( this isn’t useful and is discarded ) and peel it. Now cut into small pieces. Our pumpkin is ready now.

2. Heat a pressure cooker and add 2 tbsp of olive oil. Once oil is hot add 1 fine chopped medium sized onion. Let it sauté till translucent. To this add roughly chopped 2 garlic cloves, 1 inch chopped ginger, 1 cup diced carrots ( I took 2 medium sized carrots ) and 2 cups of pumpkin. Sauté on high and mix well.

3. Now just add enough water to submerge the vegetables. If you wish you can add vegetable broth too. This soup absolutely tastes delicious either way. Give a quick mix.

4. Add spring of rosemary. This induces nice aroma to our soup. Add salt to taste and pressure cook it for 2 whistles. It is easy to make this recipe in pressure cooker... if you don’t have cooker, you can make it in a sauce pan too...just cover and let it simmer till tender.

5. Once done, remove the rosemary herb aside and use a master to mash the soup. If you wish just blend to purée once cooled.

6. Ground 1 tsp dry roasted coriander seeds and 1 red chilli to coarse powder.

Take your soup in a bowl and add pinch of grounded coriander powder and pinch of pepper and garnish with mint leaf. Enjoy this vegan soup with a wheat toast.
