Vegan Recipe! Crispy zucchini quinoa patties - no oil

Is your garden blessing you with tons of zucchini? Try these yummy crispy zucchini and quinoa patties!

Preheat oven to 450 degrees

1 c grated zucchini

2 c cooked quinoa

1/2 c vegan cheese sauce (see link to recipe below)

1 T minced garlic (about 3 cloves)

Mix all ingredients in a mixing bowl. Form into patties on a non-stick silicone mat or parchment paper. Bake for 15 minutes. Allow to cool 5 minutes before removing from cookie sheet. Serve with vegan cheese sauce or your favorite sauce.
