EAT MORE - WEIGH LESS #6 | Healthy Meals For Weight Loss // Vegan

Eat big, eat simple & ENJOY!!

I used the blueberry acai flavour in this video!!

Blueberry Muffin Smoothie:

- 1-2 cups blueberries (fresh or frozen)

- 1/2 cup whole rolled oats

- 1 banana

- 1/4 cup raw hemp seeds

- 1 TBSP cashew butter

- 1/2 tsp cinnamon

- 1 scoop vivolife blueberry raw protein powder

- blend with any plant milk of choice

Soba Noodle Salad: (makes 2-3 servings depending on appetite!)

- 300g cooked soba noodles

- 1 1/2 cups edamame beans

- 1 cup raw carrot

- 1 cup raw shredded red cabbage

- 1/2 cup green onion (spring onion)

- 1 red bell pepper

- 1 cup fresh cilantro

- 1/4 cup sesame seeds

- 2 fresh chillis

Dressing:

- 3-4 TBSP good tahini

- juice of half a fresh orange

- 1 TBSP tamari or soy sauce

- 1/2 TBSP garlic powder

Hearty Butterbean Stew:

- 1 red onion diced

- spices I used: paprika, turmeric, garlic

- 1 cup fresh plum tomatoes

- 2 TBSP tomato puree

- 2 cans butter beans (or chickpeas)

- 2 cans chopped tomatoes

- salt & pepper

- kale salad: large bed of raw kale, juice of 1 fresh lemon + 1 soft avocado to make the dressing as shown

- serve with sweet potatoes

- apply to face :)

Vegan Dinner Recipe | High Carb, High Protein, Low Fat

Ingredients (Serves 2)

- Rice

- 300g tempeh

- 300-400g oyster, shiitake, enoki or cup mushrooms

- 1 knob ginger

- Sliced scallions and red bell pepper for garnish

Marinade ingredients:

- 3 tbsp soy sauce

- 2 tbsp maple or rice malt syrup

- 1 tbsp water

- 1 tsp smoked paprika

- 1/2 tsp hot sauce or chilli flakes (optional)

- 1 tsp liquid smoke (optional but makes the tempeh so tasty)

- 3 tsp avocado or olive oil (optional, gives extra flavour and crunch. Omit if strictly oil free)

1. Cook your rice by preferred method

2. Thinly slice the tempeh

3. Whisk the marinade ingredients in a small bowl

4. Place the tempeh strips in a tupperware container or dish with a spacious bottom. Pour and evenly coat the tempeh and let it marinate for minimum 10 mins.

5. Preheat a nonstick pan over medium-high heat and cook the tempeh for 4 minutes each side. (Leave the remaining marinade for the mushrooms)

6. Remove the tempeh onto a plate then add the mushrooms to the pan and cook for about 4 mins, add the ginger then cook for another 4 mins until they have golden edges. Add the remaining marinade and cook for a further minute.

7. Serve up with rice, tempeh, mushrooms, scallions, bell pepper and sauce of choice.

HOLIDAY Vegan Meatloaf with full recipe!

this loaf with my mushroom gravy! RECIPE

Ingredients:

1 TBSP Olive Oil

1 sweet onions

6 cloves garlic

2 celery stalks

1 carrot

1 13 ounce can/box of cannelloni beans

1/2 block tofu

1/2 Cup mushrooms

1 Sweet Potato

1/3 cup lentils cooked

2 TBSP coconut aminos

2 TBSP tomato paste

1 TBSP Mustard

1/4 cup parsley (fresh)

1/2 TBSP sage

1 TBSP Thyme

1/2 TBSP rosemary

3/4 cup bread crumbs

Salt, pepper.

1 tsp smoked paprika

2 TBSP nutritional yeast

Directions:

Prep lentils, peal sweet potato and steam for 8 minutes

1. Preheat oven to 375 degrees F.

2. Heat pan and add 1 TBSP olive oil.

3. Cook onions, garlic add in add mushrooms in soon after. Cook until onions become translucent.

4. Add celery, carrots. Once they cook and soften, add cannelloni beans, lentils and add 1 tsp tomato paste, a bit of fresh parsley, salt, pepper.

5. Then add these ingredients to food processor: Tofu, Sweet Potato, parsley, thyme, sage, rosemary, paprika, nutritional yeast, coconut aminos, tomato paste, remaining parsley, mustard, salt, pepper and pulse until well combined.

6. Add food processed blend into separate bowl add, 1/2 cup bread crumbs then stir in onion veggie blend and well combine.

7. Using a loaf pan, coat the pan with olive oil and scoop mixture into pan and mold.

8. Bake on 375 for 25 minutes uncovered, then bake for another 20 minutes covered with tinfoil, then for another 5-10 minutes uncovered. Remove from oven and let sit for 10 minutes.
