Potato Hash Stack
- Bake for 20 minutes or until golden brown at 200 degrees celsius
Ingredients:
4-5 small/medium potatoes (grated + water squeezed out - nut milk bag works great)
1 tsp mixed herbs
Cracked pepper
1/4 tsp chilli powder
1 tbsp nutritional yeast
2 tbsp rice flour
(add vegan cheese if you like)
Chickpea Pancake
- Cook for 2-3 mins until bubbles appear then fold and flip and cook for another 5 mins (on low-medium heat)
Ingredients:
1/2 onion
4-5 button mushrooms
1 capsicum
spinach
1 + 1/4 cup besan flour (chickpea flour)
1 tsp turmeric
1 tsp oregano
1 tsp coriander
1 tsp pepper
1/4 tsp chilli powder
1 tbsp nutritional yeast
1/2 cup water
1/2 cup soy milk
1 tsp apple cider vinegar
1-2 tbsp arrowroot starch (forgot to show in video)
also adding baking powder to half the mix but made it a bit weird so you'll have to try again that way but this recipe worked great!
Tofu Frittata
- Bake at 200 degrees celsius for 30-40 mins
Ingredients:
1 onion
2 garlic cloves
2-3 brown mushrooms
1/2 cup cooked kale/spinach
10 cherry tomatoes
500g firm tofu
1/2 cup soy milk (1/2-3/4 more to thin)
2-3 tbsp nutritional yeast
2 tsp turmeric
Cracked pepper
1 tsp coriander
1/2 tsp chilli
1 tbsp arrowroot starch
1-2 tsp yellow mustard
