1 clove garlic, finely chopped
1 tsp olive oil
1 medium tomato, chopped

1/8 tsp paprika
1/8 tsp cayenne pepper
salt and black pepper
1 oz spinach
2 oz cooked chickpeas
1 tbsp black olives
1 tbsp parsley, finely chopped
Preparation
Bring salted water with quinoa to a boil in a pot over high heat. Cover and simmer for 15 minutes or until all water has been absorbed
Heat up the oil in a large frying pan. Add chopped onion, garlic, yellow pepper and fry on a low heat until soft.
Add chopped tomatoes, tomato paste, and all spices. Cover the pan with a lid and gently simmer until tomato have turned into sauce.
Add spinach and cover again until spinach is wilted, stir in cooked chickpeas, olives and let them warm through. Serve with cooked quinoa topped with chopped parsley.

1.5 oz whole wheat spaghetti
1 small white zucchini
1 clove garlic
1 tsp olive oil
1/4 medium white onion
1/2 medium red bell pepper
1/2 small aubergine eggplant
3 tbsp water
1 small tomato
1 tbsp chopped parsley
salt and black pepper to taste
1/4 tsp dried oregano
1 tsp permesan cheese
Preparation
Cook pasta according to package directions.
Heat the olive oil in a frying pan. Add garlic, onion, zucchini aubergine and peppers add 3 tbsp water, cover and cook for a few minutes on low heat until tender.
Add the chopped tomatoes, parsley, salt and pepper and dried oregano.

Season with salt and pepper, chili powder, cumin, dried oregano. Add cooked rice and mix to combine.

This Carrot Soup is a super healthy recipe, it really made my day the way that it all came together and how delicious it tasted, even for those not practicing veganism, this soup is a great meal choice. I was really happy that I was able to make such a flavorful and delicious vegan meal plant-based, without having to resort to any animal proteins. Most people have a really hard time with vegan meal prep in the beginning because they are still learning how to flavor and incorporate the vegetables into their weight loss or maintenance routines for good recipes. It really pleased me that I was able to put this recipe together with what I had available on hand in my fridge and what needed to be used. 1 Chickpeas With Spinach Recipe 250 calories (1 serving)
Ingredients
1 tsp olive oil
1 garlic clove
1/4 cup onion
1 medium tomato, chopped
1 green chile, minced
salt and black pepper
1/8 tsp coriander powder
2 oz spinach
3 oz chickpeas, boiled
Preparation
In a large pan, saute onion and garlic until tender on medium heat. Add the tomatoes, green chilies, salt, black pepper, coriander, and cook for 3 mins then add spinach and cook for 5 minutes more or until spinach is wilted. Stir in the boiled chickpeas and cook for another 5 minutes and serve.
2 Corn And Tomato Salad 160 calories (1 serving)
Ingredients
2 medium tomatoes, chopped
1/4 cup onion
1/2 cup canned sweetcorn
1 tsp chopped fresh basil
1 tsp olive oil
salt and black pepper
Preparation
Combine all the ingredients well and serve chilled
3 Potato Salad 200 calories (1 serving)
Ingredients
7 oz potatoes cubed
1/3 cup scallions
1 tsp vegan mayonnaise
1 tsp yellow mustard
pinch of salt
Preparation
Bring salted water to a boil in a smal pot. Add potatoes, cover and cook until tender, 10 to 12 minutes. Remove the potatoes from the pot.
In a smal bowl, whisk mayonnaise, mustard, together. in a large bowl add the cooked potatoes and, scallions and the mayonnaise and mustard mixture. Stir to coat. Chill until cool or cold, at least 1 hour.
